Check out this recipe, I've just come across it and can't wait to give it a try. Papaya is something I often overlook in the supermarket, but these days it's easy to find as indeed is coconut. I've read so many positive things about Papaya and Coconut seems to have so many amazing health benefits (in moderation as with everything). Let me know if you try and what you think!
