![]() Check out this recipe, I've just come across it and can't wait to give it a try. Papaya is something I often overlook in the supermarket, but these days it's easy to find as indeed is coconut. I've read so many positive things about Papaya and Coconut seems to have so many amazing health benefits (in moderation as with everything). Let me know if you try and what you think! For me, I've taken the dog for a long walk, I'm going to spend some quality time with my daughter later and then to cap it off I'll be buying the ingredients for my very first Coconut Papaya Smoothie! -------------------------------- Update: (next day) I went, I shopped and after MUCH hammering and frustration I even managed to conquer a coconut! My verdict on this recipe is................ Meh! Papaya has a very distinctive flavour, and one that I suspect if you haven't grown up with it's not going to be easy to develop a taste for. This particular recipe is not for me. I will definitely use the remainder of the Papaya but in combination with other ingredients e.g. I'll add blueberries to balance the flavour, and perhaps a little coconut oil. The coconut milk is not for my palet particularly in combination with the Papaya (it was in my mind akin to drinking hand soap, in consistency and flavour), and the effort of preparing a whole coconut makes this too impractical to be worth it, so my tip is to source some prepared coconut if you're going to go for it (they didn't have that particular option at the supermarket I went to, mores the pity!) This particular combination would definitely be a slowly acquired taste, it was the number one trending health recipe yesterday so go figure! Personally I'll rate it a 2 out of 5 for great health benefits, but pretty ordinary taste. It was a fun experiment and I will use the ingredients combined with other options. The cracking of the coconut did provide me with some comedy gold of the slapstick variety... Bottom line: I appreciate the humble banana more than ever :)
